The so called 'Jade' range comprises a series of four absinthes created by Ted Breaux of New Orleans at the Combier distillery in Saumur in the Loire Valley. Built under the instruction of Gustave Eiffel the distillery still to this day uses alembics purchased from Pernod Fils which date back to around 1870. The PF 1901 replicates exactly a traditional French absinthe produced by 'Pernod Fils' in 1901. The dominant flavours are fennel, anise and coriander alongside full and rounded wormwood notes. PF 1901 is, as the original recipe dictates, a rather sweet and quite complex absinthe with a very distinctive taste, in our opinion the pick of the Jade range.
